Tofu Chili
From the kitchen of a friend
1 package firm tofu
1 tbsp vegetable oil
1/2 cup chopped onion
1 clove garlic, chopped
1 tbsp chili powder (or to taste)
2 cups sliced tomatoes
2 cups pinto beans
1 cup frozen corn
1/4 cup green salsa (optional for taste)
6 corn tortillas
In a large saucepan or Dutch oven, over medium heat, heat oil. Sauté onion and garlic in oil for about 5 minutes or until onion is tender. Stir in chili powder. Add tomatoes, beans, corn, and tofu (cut into small cubes). Reduce heat to low, cover and simmer for 10-15 minutes. Stir in salsa just before serving.
Serve with tortillas.
Note: this is delicious served over white rice, too.
